  • Sensations: Pale straw color with dense and persistent perlage. The nose is fine, fresh and fruity. In the mouth it is harmonious, with a persistence linked to the acid component.
  • Vinification: The grapes are harvested by hand and processed through soft pressing. During the following spring, the bases are re-fermented ("presa di spuma") using the classic method, i.e. in the bottle. The wine then remains in contact with the yeasts for at least 24 months, followed by disgorgement and finishing through the dosage of liqueur d'expedition.
