Vinification
Y by 11 Minutes rosé comes from the skillful blending of two indigenous grape varieties, such as Corvina and Trebbiano di Lugana, and an international variety, Carmenère.
Part vinified with a soft pressing of the red grapes, part undergoes a light maceration on the white berry skins for 8-10 hours. The must is cooled and transferred to a steel tank, where it will remain for the time necessary for decantation of the solid parts to take place. After racking, alcoholic fermentation is started, which will maintain a temperature range of 13° to 16° C. During fermentation, the state of the yeasts is monitored daily, as well as the evolution of the fermentation process.
Ten percent of the blend finishes alcoholic fermentation in new, medium-toasted French oak tonneaux. Of the remainder, 30% matures for about 4 months in second-passage, medium-toast French oak barriques and tonneaux.
Winemaker's Notes
Y by 11 Minutes is a rosé that expresses complexity and freshness, structure and delicacy, fruity notes and creaminess on the palate, like two opposites that attract each other but coexist perfectly in harmony.
Corvina, which represents the dominance in terms of percentages, brings typical hints of red fruit and great acidity. Trebbiano brings delicate aromas of citrus and white flowers, giving elegance and length in the aftertaste; finally, Carmenère gives the wine structure and ensures its stability over time.
Hints such as vanilla and roasted aromas are made evident thanks to the alcoholic fermentation in wood, allowing the wine to obtain those secondary and tertiary hints typical of an evolved rosé wine.
Pairings
Excellent accompaniment for aperitifs, first courses such as pasta with vegetables and burrata, fish main courses, white meats such as roast chicken, delicate and even mature cheeses from both goat and cow's milk.
