Ingredients:
- Pre-soaked stockfish (codfish) 800 g
- Laurel 2 leaves
- Black pepper to taste.
- Sunflower seed oil 500 g
- Fine salt to taste.

Preparation:
Rinse the stockfish (salt cod) that has already been soaked several times under cold running water to remove any excess salt. Use tweezers to remove the bones from the cod, making sure it is boneless. Cut the cod into large pieces suitable for cooking and place them in a tall pot, preferably stainless steel, with 2 bay leaves, and pour cold water into the pot until the stockfish is covered.
Bring the water to a boil and then reduce the heat to a simmer. Cook the stockfish for about 30 minutes, removing any foam that forms on the surface during cooking. Once the cod begins to unravel and becomes tender, it is ready to be drained.
Transfer the cooked codfish to the bowl of a planetary mixer, attach the blender to the mixer, and run it on medium-low speed.
Gradually drizzle in 500g sunflower oil while the planetary mixer is running. Season with salt and ground black pepper to taste.
Increase the speed of the planetary mixer and continue mixing the ingredients until the mixture becomes creamy. This may take about 10 minutes. Use two spoons to shape the mixture and create quenelles.
Serve the mantecato cod quenelles on toasted bread or polenta croutons. Garnish with fresh chopped parsley and ground black pepper to taste. Your Venetian-style baccalà mantecato is now ready to be enjoyed!
