Ingredients:
4 skinless, boneless chicken breasts
2 red peppers, cut into strips
1 medium onion, sliced
2 cloves of garlic, minced
400g canned peeled tomatoes
1 teaspoon sweet paprika
1 teaspoon dried oregano
½ teaspoon chili flakes (optional)
Extra virgin olive oil
Salt and pepper to taste.
Fresh basil leaves for garnish
Preparation:
Season the chicken breasts with salt and pepper to taste. In a large skillet, heat some extra virgin olive oil over medium-high heat. Add the chicken breasts and brown them on both sides until cooked through. Remove them from the pan and set them aside. In the same skillet, add a little more oil, if needed, and sauté the onion and garlic until soft and lightly browned. Add the peppers cut into strips to the pan and cook them for a few minutes until softened. Next, add the peeled tomatoes, paprika, oregano and chili flakes (if you want a spicier dish). Mix all the ingredients well and cook for about 10 minutes over medium-low heat, stirring occasionally. Return the chicken breasts to the skillet, making sure they are well coated with the tomato and bell pepper sauce. Cook for another 5 minutes so that the flavors blend. Check the seasoning and adjust it according to your personal preference. Remove from the heat and serve the "Chicken with Peppers" on individual plates, garnishing with fresh basil leaves on top
