Pasqua - Valpolicella Superiore 2013 Never Say Never DOC 0.75L

MAI DIRE MAI was born out of the encounter between the centuries-old experience of the Pasqua family and the exceptional terroir of the Montevegro vineyard: the 23 hectares of vineyards are located on a hilltop at an altitude of 350 meters between the Val d'Illasi and the Val di Mezzane, whose basaltic and limestone soil guarantees optimal minerality. An iconic line characterized by elegance, complexity and uniqueness in taste.

Description
The grapes are harvested by hand with careful selection. After a soft pressing, fermentation takes place at a controlled temperature of 22-26°C. The next step is refinement in 500-litre barrels and 225-litre French oak barriques (mainly new or second-hand wood) for 18 months.

Characteristics
This is a wine that must be discovered and reveals itself gradually, austere at first but then expressing itself in all its power and personality. Intense and complex, elegant and ethereal. The nose offers hints of tobacco, cedar, underbrush and balsamic notes. On the palate it is warm and intense with aromas of morello cherry, cloves and coffee, very fine and round tannins. Decisive, with great acidity, long and persistent finish with spicy notes.

Pairing
Savoury first courses with mushrooms or game ragout, risottos, red meats or boiled meats in the Veronese tradition.
