Squid ink is the ink used for defensive purposes by these mollusks belonging to the cephalopod family. Freshly extracted it is considered a product of great gastronomic value. It is composed mainly of melanin, but also contains protein, lipids, minerals (especially iron), and taurine.
Squid ink is particularly suitable for cooking, as it has a strong and distinct taste even when used in modest amounts. Added in the mixture, it effectively colors pasta. In sauce, it promotes color contrast and enhances hints of fish.
